The Big Green Eggs can store enormous amounts of heat in its ceramic shell. It is always advisable to use a Safe Shutdown Technique when you have finished cooking on the EGG. This helps prevents pressure building up inside the Big Green Egg (from heat and moisture) that could potentially cause hairline fractures in the ceramic.
After a Low to Medium temperature cook (up to 250°C), close the Draft Door completely but leave the Dual Function Metal Top open for roughly five minutes before closing it down completely. Once both vents are closed, the fire is starved of oxygen and will die out in an hour or so.
After a High Temperature cook (up to 250°C), close the Draft Door completely but leave the Dual Function Metal Top as it is for approximately fifteen minutes. When the temperature reaches 200°C (390°F), you can close the Dual Function Metal Top roughly halfway from where it was and leave for a further 5-10 minutes. After that, you can close the Dual Function Metal Top completely.
Once the EGG has cooled, always replace the Dual Function Metal Top with the Ceramic Damper Top to keep the EGG moisture free.
Maintaining Your EGG
